My Grandmother made the best everything. I don't have a recipe for a lot of things that she did, my mental recollection and recreation of her food is the way that I re create some of the more basic recipes that she made. I also use a lot of trial and error in order to create the perfect recipe. So in honor of my Grandma, this is my creation of my grandmothers fried chicken, exactly how I remember it.

Mix flour, corn starch and spices together and mix. Put chicken in the
mixture and coat until its no longer wet and sticks to the buttermilk
Heat shortening in large skillet. Then when oil is ready fry the
breaded chicken in the pan. Fry the chicken on one side until completely
browned then turn and cook the other side.
You could use the grease in the pan and put in some of the extra flour
mixture, brown and add milk for a country gravy or water for a
brown gravy.
