Olive Oil Cake



So this day the child wanted cake. Sadly I didn't have regular oil or enough butter for cake and frosting, and who wants cake without frosting?!? Not anyone in my house. So I decided to come up with something on my own. in this test kitchen of mine I pull all the stops.

Ingredients 
1C AP flour
3/4C sugar
2tsp baking powder
1/4tsp salt
1 egg
1/2c buttermilk or (1tbsp buttermilk powder and 1/2c water)
1/3c greek yogurt or sour cream
3tbsp olive oil
2tsp vanilla

Recipe for buttercream 

Method
Preheat oven to 350° Spray with baking spray or grease a 8x8 baking pan.

Whisk together all of the dry ingredients



Whisk together wet ingredients

 

Add wet to the dry until combined



Pour batter into prepared pan.



Bake 30 min until knife or toothpick comes out clean



Cool Frost Eat

Pancakes

I have finally conquered the pancake. here my friends is the perfect pancake. Enough said...

Ingredients
1c all purpose flour
1tbsp brown sugar
2tsp baking powder
1/2tsp salt
1c milk
2tbsp unsalted butter melted
1 large egg
1tbsp vanilla

Method
In a small bowl whisk together flour sugar baking powder and salt, set aside.

In a medium bowl whisk together milk butter and egg. Add dry ingredients to milk mixture; whisk until just moistened.

Heat a large skillet or griddle over medium. Spray with nonstick cooking spray. For each pancake, spoon 2-3 tablespoons of batter into the griddle

Cook until surface of pancakes have some bubbles and a few have burst 1-2 minutes. 


Flip carefully with spatula. Cook until browned 1-2 min more.

Keep warm.

Serve with butter and syrup Mix in anything you wish to make a different pancake.

Crispy Onion Rings


















I love onion rings. This is a very recent thing. My Man ordered some from IHOP and it turned me forever. I seriously love IHOPS onion rings the best. I have tried many times to make my own using lots of different recipes but I never get them to stay crispy until this last time I tried... OMG I nailed it they were so perfect and delicious!

Ingredients
2 large onions, cut into 1/4-inch rings
Vegetable oil, for frying 
1 1/4c all-purpose flour 
1/4c cornstarch 
2tsp baking powder 
1tsp garlic salt
1 1/3c ice-cold water\

Method
Place onions in a large bowl filled with cold water and soak 10 minutes. Heat 2 inches of oil in a deep, heavy-bottomed pot to 365 degrees. In a medium bowl, whisk together flour, cornstarch, baking powder, and salt. Whisk in ice-cold water and place batter bowl over a bowl of ice. Drain onions and dry thoroughly between layers of  paper towels.
Working one handful at a time, dip onions in batter, allowing excess to drip back into bowl, and gently place in oil.














Fry, turning once, until crisp and golden, 3 minutes.














Transfer to a paper towel-lined tray to drain and sprinkle with garlic salt to taste.
