Chicken and Waffles

















I have seen this combination for years. I have never seen it on a menu, or tried it. I have thought for years that it looks so amazing, wanted to try it but have never. I decided to try to make it myself and yeah it was pretty much the most awesome combination ever. I wonder though how did it become something that one would eat together.... Well it looks as though in 1790's Jefferson purchased a Waffle Iron from France and well after recipes for waffles and fried chicken were found together in cookbooks. It became popular in 1930's Harlem when a late night meal was well combined with a breakfast favorite. I am glad I made the dish. The waffle recipe is the best one. I have been making waffles for a long time, I tweaked it the last time and all my husband could say was baby theses waffles are delicious give me another!


Waffles

Ingredients
2 cups All-purpose Flour
3 teaspoons Baking Powder
1/2 teaspoon Salt
1/4 cup Sugar
1-1/2 cup Milk
2 whole Egg Yolks
1 Tablespoon Vanilla Extract
1 teaspoon (additional) Vanilla Extract
1 stick (1/2 Cup) Salted Butter, Melted
4 whole Egg Whites

Method
Preheat the waffle iron to the regular setting.














Sift together the flour, baking powder, salt, and sugar in a bowl.
In a separate bowl, whisk together milk, 2 egg yolks, and vanilla. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined.
In a separate bowl (or using a mixer), beat the egg whites with a whisk until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through.
Scoop the batter into your waffle iron in batches and cook according to its directions (lean toward being a little deep golden and crisp!) Remove and serve immediately with softened butter and warm syrup.
















Fried Chicken

Ingredients
4 chicken breasts
1c buttermilk
2 eggs
Garlic Salt
Pepper
1tsp Smoked Paprika
1c all-purpose flour
1/2c corn starch
1tsp smoked paprika
1/4t cayenne
Garlic Salt and Pepper

Method
Whisk together the buttermilk and eggs, garlic salt pepper and paprika. Coat chicken in mixture and let sit overnight or at least 30 min.
















Mix flour, corn starch and spices together and mix. Put chicken in the mixture and coat until its no longer wet and sticks to the buttermilk















Heat shortening in large skillet. Then when oil is ready fry the breaded chicken in the pan. Fry the chicken on one side until completely browned then turn and cook the other side.
















You could use the grease in the pan and put in some of the extra flour mixture, brown and add milk for a country gravy or water and maple for a brown maple gravy.

















Get your delicious waffles and top with butter and Chicken and Gravy or Syrup. This is a wonderful and delicious combination.
