Chicken and Biscuits


My stepfather used to make his pot pie topped with biscuits, I love it this way I prefer to make it like this. Its easy and yummy. This is just another take on the pot pie recipe, its called chicken and biscuits. The difference is that this one is topped with biscuits. I have the best biscuit recipe yet. I double the recipe to make enough to cover the top of the dish. You can make this recipes filling the same as the pot pie. or...

Some other simple ways to do this is to use meat, gravy leftovers and frozen veggies (with carrots green beans, peas and corn.)  or... Make the meat and stock method and thicken with corn starch, then add the frozen veggie mix.

Ingredients
3c chicken
3c broth
4tbsp corn starch and 3tbsp water mixed
1 bag of mixed veggies peas and carrots OR ( 3 carrots chopped and 1c frozen peas)

Method
Once you figure out your method for the filling put the mixture into an oven safe dish. drop biscuits on top or roll out and cut into rounds and arrange on top of filling. Bake in the 350° oven for about 20 minutes until biscuits are browned and filling is bubbling.

Turkey Pot Pie










Best dish for leftover Turkey and gravy from Thanksgiving. Such a down home cooked meal, it looks hard but really its simple. If you have leftovers from a turkey or chicken boil the carcass and make a stock, take all of the leftover meat from this as well. Discard all of the rest of the bones, fat and skin. You can freeze the stock and meat for use at a later date. With these leftovers you now have the base for a couple meals, chicken noodle soup, and pot pie. Ingredients
3c chicken or turkey meat
3c broth
4tbsp corn starch and 3tbsp water mixed

1 large potato diced
Pie Crust

Method
Prepare bottom crust in pie plate. Put both and meat in a medium saucepan. If using potatoes and fresh carrots add now. Boil then simmer for 10 min. Mix cornstarch in until thickened. Add frozen peas (or frozen veggie mix) transfer into prepared pie plate. Cover with a top crust, or crust cutouts. Cook in oven at 350° for and hour or until crust has browned.

Tamale Pie

 







I remember eating this once in grade school. I had a sleepover with a friend and her mom made it. Tamale Pie. Yum. I researched a few recipes online and compiled them to make my own take on this one. It turned out delicious. My boss said it was like a treasure in every bite!


Ingredients
1 lb. ground beef
1tsp. ground cumin
1/2tsp. salt
1/2tsp. chili powder
1/4tsp. pepper
1 15oz can black beans drained
1 15oz can kidney beans drained
1 can Rotel diced tomatoes
1 can whole kernel corn, drained
1 10oz can green enchilada sauce
1 onion chopped
1/4c minced fresh cilantro
2c cornbread batter
2c shredded Mexican cheese blend

Sour cream, diced avocados, black olives, diced tomatoes

Method
In a large skillet, cook beef or turkey over medium heat until no longer pink; drain. Stir in the cumin, salt, chili powder and pepper. Stir in the beans, tomatoes, corn, enchilada sauce, onions and cilantro. Simmer to boil, transfer to a oven safe dish bake at 350° for 1 hour.
In a small bowl, combine muffin mix spoon over meat mixture, return to oven and cook 1 hour longer or until a toothpick inserted near the center comes out clean.
Sprinkle top with cheese; bake until cheese is melted. Serve with sour cream and additional cilantro if desired. Makes 8 servings.
