Tamale Pie

 







I remember eating this once in grade school. I had a sleepover with a friend and her mom made it. Tamale Pie. Yum. I researched a few recipes online and compiled them to make my own take on this one. It turned out delicious. My boss said it was like a treasure in every bite!


Ingredients
1 lb. ground beef
1tsp. ground cumin
1/2tsp. salt
1/2tsp. chili powder
1/4tsp. pepper
1 15oz can black beans drained
1 15oz can kidney beans drained
1 can Rotel diced tomatoes
1 can whole kernel corn, drained
1 10oz can green enchilada sauce
1 onion chopped
1/4c minced fresh cilantro
2c cornbread batter
2c shredded Mexican cheese blend

Sour cream, diced avocados, black olives, diced tomatoes

Method
In a large skillet, cook beef or turkey over medium heat until no longer pink; drain. Stir in the cumin, salt, chili powder and pepper. Stir in the beans, tomatoes, corn, enchilada sauce, onions and cilantro. Simmer to boil, transfer to a oven safe dish bake at 350° for 1 hour.
In a small bowl, combine muffin mix spoon over meat mixture, return to oven and cook 1 hour longer or until a toothpick inserted near the center comes out clean.
Sprinkle top with cheese; bake until cheese is melted. Serve with sour cream and additional cilantro if desired. Makes 8 servings.
