Waffles

I never ever likes waffles growing up. I just only loved soft pancakes. Something somewhere changed me. I think its really when I started cooking and experimenting to create my own recipes. I have an earlier past that has been insanely popular on pinterest but since I have made alterations this is the go to recipe, And my husband loves them. My kids do too. And really so does everyone.
Fun for the kids I like to put out fruit and nuts, chocolate chips and they can build their own waffles.

Ingredients
2c All-purpose Flour
3tsp Baking Powder
1/2tsp Salt
2tbsp Sugar
2tbsp Brown sugar
1 1/2c Milk
2 Egg Yolks
1 Tablespoon Vanilla Extract
1 stick (1/2 Cup) Salted Butter, Melted
 Egg Whites
Method
Preheat the waffle iron to the regular setting.














Sift together all of the dry ingredients... the flour, baking powder, salt, and sugars in a bowl.
Whisk together milk, 2 egg yolks, and vanilla. Pour over the dry ingredients and stir. Pour in the melted butter and continue mixing until combined.
In a New SUPER CLEAN Bowl beat the egg whites with a whisk until stiff. Using a mixer works best for making whites stiff. Slowly fold the egg whites into the batter.
Pour the recommended amount into your waffle iron and follow its settings.
Top with wonderful topping or lots of butter and Syrup... MMMMMMM MMM mmmmmmm

Country Fried Potatoes


When I cook breakfast I always make my potatoes. Everyone loves them they are sublime, I cannot make breakfast without them, I might get in trouble. My husband asked how I made them, I told him I couldn't tell him or he would never need me again. 

Ingredients
4 potatoes diced
1/2 onion (optional)
Garlic salt to taste
Pepper
tsp smoked paprika
1/2c water
2tbsp Olive oil

Method
Heat olive oil in pan add potatoes onions and spice. 




Fry until you have some good browning mixing along the way


Add water to pan


Fry until tender and crispy yummmmmmmiiiiii

Biscuits and Gravy














I was lying in bed starving. Wondering what to cook. I decided I wanted biscuits. But how could I make biscuits and make my man happy. Oh duh, Biscuits and gravy. I never made it before for him. When he asked what I was making I told him, he said, "I dont know, I will try it though." He really loved it. And when I made breakfast again I asked what he wanted, he said "all the normal stuff, potatoes, eggs pancakes and biscuits and gravy" HAHA buscuits and gravy are a special one off.

For my meal I made homemade Sausage patties. And Homemade biscuits. Click on links for my recipes

Ingredients
1 lb Breakfast Sausage 
Biscuits
2 Tablespoons Flour
1 cup Milk
Salt
Pepper

Method
Cook the sausage according to the instruction (thoroughly cooked inside).














Remove them to a paper towel to drain.














Place your biscuits into the oven to cook according to the instructions.

Use grease out of the skillet/pan you used for the sausage, Over low to medium-low heat, add about 2 tbsp of flour to the grease and whisk immediately.














If you add in a little more grease so it’s smooth and stirrable. You want to find a good balance between the flour and the grease.














Once you find it, just keep stirring with the whisk and allow the mixture to brown for a few minutes. As you whisk, scrape in the anything from the bottom of the pan as you go.














After 2-3 minutes, whisking constantly, pour in about a cup of milk.


























IF the mixture is dry, lumpy or pasty, add in more milk –













again, drawing a balanced mixture.

Add salt and pepper to taste. Let the gravy warm up over low heat, stirring occasionally.

Breakfast Sausage and Blueberries















So yesterday I cooked up some links and Daddy thought they tasted weird. Well I fixed that this morning when I made my own breakfast sausage patties. Very delicious!Very Easy too I had all the Ingredients in the house. I used 3 sweet Italian links and Ground Chicken. If you want to use all ground chicken that works fine. I would add more of the spices to get the full flavor.

When I was living in Minneapolis the uptown Whole Foods was amazing. I cooked for a high profile family and I would pick up the meats from there butcher. One day I noticed they had a blueberry maple sausage. I thought it sounded heavenly. I asked the Meat boy about them and they said that they were life changing. So I picked up a pound. Take it from the vegetarian, they were life changing, so life changing I was buying a pound for myself each week.

I will provide both recipes here I made some plain then added the blueberries to the rest of the meat so I had a little of both.

Ingredients
1/2 lb Sweet Sausage
1/2 lb Ground Chicken
2tsp kosher salt
1 1/2tsp freshly ground black pepper
2tsp finely chopped fresh sage leaves
2tsp finely chopped fresh thyme leaves
1/2tsp finely chopped fresh rosemary leaves
1tbsp light brown sugar
1tsp Maple 
Optional 1/4c blueberries some smashed some whole
Method  
Chop fresh spices fine set aside,

  












 Mix together meats, knead until well combined, add all ingredients  mix till combined.
 












Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months.
For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.
